AN AWARD winning chef who has worked with celebrity chef Gordon Ramsay is opening his own pub.

Mick Binnington, 32, from Chelmsford is a Michelin award-winning chef who worked as head chef for Gordon Ramsay in London, and previously at Midsummer House in Cambridge and The Mandarin Oriental in London.

Mick and his wife Lydia, 26, are opening the The Windmill, Chatham Green on July 1 after an extensive revamp.

Lydia said the pub will be a real country drinking pub but we will also offer outstanding food.

She added: “It is so exciting to see everything taking shape, we are nearly finished and it is looking amazing.

“We have kept all the beautiful character that makes the place, we have redecorated the restaurant, there is a new bar, new kitchen, and the toilets have been completely re-installed to a high standard.

“We have also changed the outside of the building to add a touch of class and elegance.”

The pub will offer a range of dishes including beer battered haddock and chips.The couple will be holding a preview evening with complimentary canapés and Prosecco on Thursday June 29 from 6pm.

When asked about his work with Gordon Ramsay Mr Binnington said: “All I will say is that being part of the Gordon Ramsay Group was an honour and an invaluable experience to my development not only as a chef but as a businessman, as I had a very hands-on role with the running of the business.

“I wouldn’t have even considered leaving the group if it weren’t for the amazing opportunity to realize our dream and take on The Windmill!.

“I have been very fortunate to work with some of the true masters in the industry, including Chris Staines and Pascal Aussignac to name but a few, all in Michelin starred restaurants so naturally I have developed a passion for fine dining.”
