THE restaurant of a Michelin-starred chef who trained with Raymond Blanc has received a one-star food hygiene rating.

Food by John Lawson, at Leigh Road, in Leigh, was given the rating by Scores on the Doors, a partnership between the Food Standards Agency and councils to give diners an inspection rating for each café, restaurant and take-away.

The one-star rating, which was given after an inspection last month, translates to “major improvement necessary”.

Westminster-trained John Lawson, who was awarded a Michelin star for a restaurant he owned in Melbourne, Australia - No 8 by John Lawson, told the Echo: “The low score is based around vacuum packing procedures and I didn’t want to pay an extra £200 to request another visit, they have already addressed the issue.”

The food hygiene and safety was rated “good”.

Food by John Lawson is a no-menu restaurant which updates the food offer based around the locally-sourced, seasonal produce.

The Scores on the Doors website, which is up-to-date as of Monday, gives a breakdown of the rating.

Each inspection is split into three categories; food hygiene and safety, structural compliance, and confidence in management.

For confidence in management the restaurant, was given a ‘little’ rating, which is the rating above ‘no confidence’.

The website explains that this rating means there is a ‘varying record of compliance’, a ‘poor appreciation of hazards and control measures’ and ‘no food safety management system’.

A ‘fair” rating was given for structural compliance, stating there is some non-compliance with statutory obligations and industry codes of recommended practice.
